Healthy Quinoa Salad
What’s better than an exquisite salad rich in Fibre, Minerals and Antioxidants? The lime in it gives it a refreshing kick, along with other veggies that make up to a Healthy High Protein Vegan Diet. This colourful recipe tastes great when served right away and even better when served the next day when all the flavours get time to mix up well. It’s a whole new way to enjoy Quinoa!
2 tbsp Lemon juice
1 tsp Water
Condiments as per preference
Veggies as per your choice
1 tsp Olive oil
Directions(For qty, refer to the ingredients section)
- Combine rinsed quinoa with water and bring it to boil. Cook it until quinoa absorbs water. Remove the heat and cover it to make quinoa fluffy.
- Once quinoa is cooled, combine it with Chick-peas, Bellpepper, Onion, Cucumber, and Parsley.
- Then take a small bowl and add olive oil, lemon juice, and salt. Whisk it and add it to the quinoa mix
- Season it with black pepper or extra salt if necessary
