Craving some tasty and healthy food? This delightful salad will leave you wanting for more. The earthy flavour of mushrooms, the added crunch of nuts and the tanginess of tomatoes makes the mighty buckwheat, even mightier. Try your hand and share the pictures with us for some awesome surprises :)

Ingredients


2 bowls of Quinoa
1 tbsp brazil nut (coarsely chopped)
2-3 large mushrooms
1-2 tomato
1 large garlic cloves, finely diced
1 tsp dried rosemary
Salt to taste
black pepper
2 tbsp hazelnuts, chopped
2 tbsp olive oil
1-2 tbsp balsamic vinegar

Directions


  1. Rinse the quinoa and boil to cook.
  2. Saute leek and garlic.
  3. Add mushrooms and stir until cooked.
  4. Season with salt and pepper and a tablespoon of balsamic vinegar.
  5. Allow it to cookout.
  6. Add boiled buckwheat.
  7. Season as per taste.
