Quinoa is a high-protein, good-for-you grain. It can be substituted for couscous and makes a lovely side dish. This recipe is a crunchy, lemony, healthy dish that can be used as a side or as a light meal. 1/4 cup Pine Nut
1/4 cup Chopped Red Onion
2 stalks Celery
2 cup Water
1/4 tbsp Cayenne Pepper
1/2 tsp Cumin (grounded)
1/4 cup Lemon Juice
1 cup Fresh Parsley (chopped)
Directions (For qty, refer to the ingredients section)
- Toast the pine nuts on a medium heat while stirring constantly. This will take 5 minutes. Set aside to cool. Take quinoa, water, and some salt in a saucepan.
- Boil it and then reduce the heat to medium. And cook the quinoa is tender and water has been absorbed. This can take 10 minutes.
- Cool slightly and then fluff it with a fork. Transfer the quinoa to a serving bowl and while stirring add pine nuts, lemon juice, celery, onion, cayenne pepper, cumin, and parsley.
