Quinoa is a high-protein, good-for-you grain. It can be substituted for couscous and makes a lovely side dish. This recipe is a crunchy, lemony, healthy dish that can be used as a side or as a light meal. Enjoy the texture and taste and lemony flavor while getting complete protein and the benefit of wholesome goodness.


1 cup True Elements Quinoa
1/4 cup Pine Nut
1/4 cup Chopped Red Onion
2 stalks Celery
2 cup Water
1/4 tbsp Cayenne Pepper
1/2 tsp Cumin (grounded)
1/4 cup Lemon Juice
1 cup Fresh Parsley (chopped)

Directions (For qty, refer to the ingredients section)

  1. Toast the pine nuts on a medium heat while stirring constantly. This will take 5 minutes. Set aside to cool. Take quinoa, water, and some salt in a saucepan.
  2. Boil it and then reduce the heat to medium. And cook the quinoa is tender and water has been absorbed. This can take 10 minutes.
  3. Cool slightly and then fluff it with a fork. Transfer the quinoa to a serving bowl and while stirring add pine nuts, lemon juice, celery, onion, cayenne pepper, cumin, and parsley.
