1/2 cup cooked chickpeas
1/4 cup chopped cucumber
1/4 cup chopped tomato
1/4 cup chopped olives
1/4 cup chopped parsley or coriander
1 tbsp Tahini paste
1 tsp Olive oil
Salt and pepper as required
1 tsp Lemon juice

- In a bowl add quinoa and veggies.
- Add the tahini paste, olive oil, lemon juice, salt and pepper.
- Mix everything together and garnish with parsley or coriander leaves and serve.
