Quinoa Berry Porridge
Burnt out on your favorite oatmeal breakfast? Start your day off with this Quinoa Berry Porridge – a protein-packed, quick and filling breakfast bowl. Enjoy variations of toppings (fruits, nuts, granola, etc.) mixed in with earthy quinoa. Add this to your collection of quinoa breakfast recipes to make it year-round.
Directions (For qty, refer to the ingredients section)
- Stir together 1 ½ Almond Milk, Quinoa, Water, Granulated Sugar, Ground Cinnamon, Salt and Almond Extract (optional) in a saucepan.
- Bring to boil over medium heat. Cover, reduce heat to medium-low and simmer for 15 minutes until liquids are absorbed.
- Distribute into 4 bowls, top each with ¼ cup Blueberries, 1 Tbsp Chopped Almonds, 2 Tbsp Almond Milk, ½ tsp Demerara Sugar and ½ tsp fresh lemon zest.
- Serve it hot or cold according to preference.
