Quinoa Salad

A Perfect Summer Salad made of Quinoa and high protein chickpeas. The best part about this salad is that you can serve this warm or cold, both ways it tastes delicious!


1 cup cooked quinoa
1/2 cup cooked chickpeas
2 bell peppers (of your choice)
1 chopped tomato
1/3 diced cucumber
1/4 cup True Elements Dried Cranberries
1 sprig thinly sliced green onion
1/2 cup True Elements roasted sunflower, pumpkin, and flax seeds

Ingredients for Dressing:
2 lemons, juiced
2 Tbsp olive oil
1 tsp soya sauce
1 tsp balsamic vinegar or honey
1 tsp chaat masala Salt and pepper to taste.

Directions (For qty, refer to the ingredients section)

  1. Cut the vegetables, and add them to a large bowl along with the cooked quinoa, chickpeas, and dried whole cranberries.
  2. Add all the dressing ingredients to a small bowl and mix well.
  3. Pour the dressing over the quinoa mix and toss it all together. Top with the roasted sunflower, pumpkin, and flax seeds
