Quinoa Salad

Description
A Perfect Summer Salad made of Quinoa and high protein chickpeas. The best part about this salad is that you can serve this warm or cold, both ways it tastes delicious!
Ingredients
1/2 cup cooked chickpeas
2 bell peppers (of your choice)
1 chopped tomato
1/3 diced cucumber
1/4 cup True Elements Dried Cranberries
1 sprig thinly sliced green onion
1/2 cup True Elements roasted sunflower, pumpkin, and flax seeds
Ingredients for Dressing:
2 Tbsp olive oil
1 tsp soya sauce
1 tsp balsamic vinegar or honey
1 tsp chaat masala Salt and pepper to taste.
Directions (For qty, refer to the ingredients section)
- Cut the vegetables, and add them to a large bowl along with the cooked quinoa, chickpeas, and dried whole cranberries.
- Add all the dressing ingredients to a small bowl and mix well.
- Pour the dressing over the quinoa mix and toss it all together. Top with the roasted sunflower, pumpkin, and flax seeds
