Veg Quinoa Salad

Description
A healthy make-ahead meal for you. Cook the quinoa and keep it in the refrigerator. When you want to enjoy a wholesome salad, just mix your favorite veggies and seasoning, and voila, a healthy yet filling meal is ready.
Ingredients
1 cup True Elements Quinoa (cooked as per package instructions)
2 cups water
1/2 cup cooked chickpeas
1/2 medium cucumber
1 medium onion
Paneer
Olive oil
lemon juice
1 tablespoon vinegar
Salt to taste

Directions (For qty, refer to the ingredients section)
- In a large serving bowl, combine the chickpeas, cucumber, paneer, onion.
- In another bowl mix olive oil, lemon juice, vinegar, and salt.
- When you want to enjoy the salad, just mix everything along with cooked quinoa and enjoy!
