A healthy make-ahead meal for you. Cook the quinoa and keep it in the refrigerator. When you want to enjoy a wholesome salad, just mix your favorite veggies and seasoning, and voila, a healthy yet filling meal is ready.


1 cup True Elements Quinoa (cooked as per package instructions) 2 cups water
1/2 cup cooked chickpeas
1/2 medium cucumber
1 medium onion
Olive oil
lemon juice
1 tablespoon vinegar
Salt to taste

Directions (For qty, refer to the ingredients section)

  1. In a large serving bowl, combine the chickpeas, cucumber, paneer, onion.
  2. In another bowl mix olive oil, lemon juice, vinegar, and salt.
  3. When you want to enjoy the salad, just mix everything along with cooked quinoa and enjoy!
