Bamboo Rice Payasam


Bamboo rice is a treasured variety of rice and is eaten widely for it’s health benefits, especially in the Southern part of the country. It just can’t be used as a substitute to your daily rice, but also can be used to make some really delectable dishes. One such dish is the bamboo rice payasam which makes a great dessert.

  1. Thoroughly wash the bamboo rice under running water, 3 to 4 times. Boil some water and grated jaggery and boil well till the jaggery is dissolved.
  2. Heat ghee in a pan and fry the coconut slices till they turn lightly golden in colour. Add cashew nut in the same pan and fry them as well.
  3. Pour coconut milk in a thick bottom pan and bring it to boil. Add enough water to bring it to the desired consistency.
  4. After the mixture is boiled, add bamboo rice and cook it well. Make sure that the rice is not overcooked. Add the molten jaggery and stir well. The payasam will gradually thicken in consistency.
  5. Add ginger powder and cardamom powder and stir. Also, add the fried coconut slices and cashew nuts and cook for 4 to 5 minutes.
  6. Transfer the payasam in a serving bowl and serve hot.


1 cup Bamboo rice
250gm Jaggery
2 cup Coconut milk
1/4 cup Cashew nut
1/4 cup Coconut slices, thin
1/2 tsp Dry ginger powder
1/2 tsp Cardamom powder
1/4 tsp Cumin powder
2 tbsp Ghee
Water- as desired.
